PESCA DI GALLIO

 

INGREDIENTS:

 

3 lbs. Seasoned cooked fish filets

½ white onion finely chopped

½ red onion finely chopped

1 jalapeno finely chopped

1 ear fresh corn shucked and corn removed (decorned)

1 bunch cilantro fincly chopped 2 cups

½ red bell pepper finely chopped

1 tbsp. Chili powder

1 tbsp ground cumin

1 lime juiced

4 tbsp. Olive oil

2 TBSP TEQUILIA

Salt to taste

Black pepper to taste

2 ripe tomatoes finely chopped

 

INSTRUCTIONS:

In a large mixing bowl, combine all ingredients except fish, and mix well!

Flake fish filets and gently fold into mixture

Serve as tortillias or as a hearty side dish!
