Allegiance Pork Chop w/ Red Currant and Apple Compote

Serves 2

Ingredients:

  • 2 – 16 oz allegiance pork chops frenched
  • 1/8 tsp kosher salt
  • ¼ tsp gr black pepper
  • 2 Tbsp olive oil
  • 4 oz Red currant & apple compote (recipe follows)

Instructions:

Rub the pork chops with olive oil and season with salt and pepper.  Cook chops until medium about 150 degree internal temperature.  Top each chop with 2 oz of red currant and apple compote.

Red Currant & Apple Compote

Yield 16 oz

Ingredients:

  • 1 red apple (skinned, cored and diced)
  • ¼ c red currants
  • 1 tsp garlic (minced)
  • 1 Tbsp sugar
  • ¼ tsp red chili flakes
  • ½ c orange juice
  • 1/8 tsp sea salt
  • 1/8 tsp gr black pepper
  • ¼ c pecan halves
  • 2 Tbsp unsalted butter

Instructions:

In a sauté pan over medium heat add butter and allow to melt.  Add apples, garlic, red currant, chili flakes, pecans,  salt and pepper.  Cook for 4-5 minutes.  Add sugar and arrange juice and allow to simmer for 5-6 minutes.  Remove from heat and serve.
