NEW ORLEANS (WGNO) – It beat out the mac and cheese from Virginia.

It beat out the chocolate cream pie from Alaska and the mashed, fried and stuffed potato from New York City.

It’s the Food Network’s number one Thanksgiving dish in America.

It’s creole roast turkey.  And you can devour it only at Broussard’s in New Orleans.

Broussard’s is a restaurant with French elegance.  But it’s down to earth.  And  out of this world Chef Neal Swidler is the genius behind America’s number one Thanksgiving dish.

WGNO News with a Twist features guy Wild Bill Wood goes behind the scenes and into the kitchen at Broussard’s to show how the turkey has become number one.

Chef Swidler says he brines the turkey for eight hours.  Then he rubs it with a secret Creole seasoning blend. Then comes the roasting.  And that takes four hours.  And it takes place over pecan and oak wood.

The turkey does not arrive for Thanksgiving alone.  It’s served with sweet potatoes, smoked andouille sausage gravy and spoonbread.

Spoonbread is a classic southern dish. It’s kind of like a pudding made with cornbread.  Cornbread on steroids, Chef Neal describes it.

It may not be number one on the Food Network list, yet, but it’s a favorite in the south.
